Greens with Oyster Sauce and Sesame Oil

Blanched leafy greens with oyster sauce and piping hot sesame oil.

Ingredients

  • 1 or 2 large bunches of leafy greens such as mustard greens, choy sum, bok choy or gai lan.
  • oyster sauce
  • sesame oil

Directions

  • Remove the oyster sauce from the fridge and bring it up to room temperature.
  • Wash the greens and cut into 10cm lengths.
  • Blanch the greens in boiling water until wilted.
  • At the same time, heat 2 tablespoons of sesame oil in a small saucepan until smoking hot.
  • Drain the greens well. If the greens are very leafy, squash the greens in a sieve using the back of a spoon, to remove excess moisture.
