This is my “go to” recipe if I’m asked to bring something to a BBQ or get together.

Ingredients

  • sweet potato
  • red onion
  • asparagus
  • capsicum (bell pepper)
  • potato
  • 8 eggs
  • 1 cup cream
  • 1 cup grated cheddar cheese
  • 1/4 cup finely grated parmesan
  • fresh basil leaves

Directions

  • Prepare all the vegetables, drizzle with olive oil and season with sea salt.
  • Bake the vegetables until cooked. Some vegetables will cook quicker than others so just remove them and place them in your baking dish as they are done.
  • Whisk the eggs and combine with the cream, cheeses and torn basil.
  • Pour over the baked vegetables.
  • Season with black pepper.
  • Bake until golden and the egg mixture is cooked through.

Serve with rocket salad.
