This is my “go to” recipe if I’m asked to bring something to a BBQ or get together.
Ingredients
- sweet potato
- red onion
- asparagus
- capsicum (bell pepper)
- potato
- 8 eggs
- 1 cup cream
- 1 cup grated cheddar cheese
- 1/4 cup finely grated parmesan
- fresh basil leaves
Directions
- Prepare all the vegetables, drizzle with olive oil and season with sea salt.
- Bake the vegetables until cooked. Some vegetables will cook quicker than others so just remove them and place them in your baking dish as they are done.
- Whisk the eggs and combine with the cream, cheeses and torn basil.
- Pour over the baked vegetables.
- Season with black pepper.
- Bake until golden and the egg mixture is cooked through.
Serve with rocket salad.
