Nourishing and delicious, this clear chicken soup is packed with nutrients. It’s a great way to boost your immune system and stay healthy.
Ingredients
- 1 whole chicken carcass
- 1 inch ginger, sliced
- 2-3 cloves garlic, peeled
- pepper and salt
Directions
- Wash the chicken well and place it in a pot and cover with cold water. The pot should only just be larger than the chicken.
- Raise the heat and simmer for 5 minutes or until it starts to produce scum.
- Drain all of the water and rinse the chicken to remove as much scum as possible. This step will result in a much clearer soup.
- Cover the chicken with cold water again. Add the ginger and garlic.
- Season with pepper and salt.
- Simmer very gently, with the lid on for at least 2 hours. There should be very slow bubbling.
- Let the soup cool slightly and remove all the chicken, garlic and ginger.
- Pour off the liquid into storage containers.
- Discard any remaining solids left in the bottom of the saucepan.
- The soup is now ready to use. Adjust the amount of salt to taste before serving. It will take quite a bit to bring out the flavour.
Serve as soup with a few pieces of chopped chives or use as a basic chicken stock for other recipes.
