Slightly spicy marinated prawns, perfect for picnics.
Ingredients
- 400g cooked prawns
- 3 Tbsp good quality olive oil or other flavoursome oil*
- 1 Tbsp freshly squeezed lemon juice or other acid*
- 1 cloves garlic, finely chopped
- 1 medium sized red chilli, deseeded and chopped
- 2 Tbsp chopped flat leaf parsley
- salt and pepper to taste
Directions
- Combine all the marinade ingredients and mix well.
- Add the prawns and marinate in the fridge for at least 3 hours.
Serve on a salad or on their own.
Add to a salad jar with tender spinach leaves, rocket, beetroot, avocado, feta, bocconcini, edamame beans, rice, couscous or any other salad combination. Arrange ingredients in layers with the fragile leaves on top.
