This easy to prepare French baked dessert is custardy in the middle and cake-like around the edges. Clafoutis is best made with tart fruits for a contrast in flavour.

Ingredients

  • 3 eggs
  • 1 cup full cream milk
  • 1/2 cup caster sugar
  • 1 Tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/2 cup plain flour (all purpose)
  • 1 tsp salt
  • fruit (apple, cherry, peach, blueberry, apricot, raspberry)

Directions

  • Preheat the oven to 180 deg C.
  • Grease a baking dish or cast-iron skillet with the butter.
  • Beat the eggs, milk, sugar and vanilla.
  • Add the flour and salt and mix until combined.
  • Arrange the fruit in the baking dish/skillet and pour in the batter.
  • Bake for 50 minutes or until golden brown and comes away slightly from the sides of the dish.
  • Cool for 10 minutes before serving.

Serve warm with whipped cream and dusted with icing sugar.
Apple and cinnamon is a nice combination.
The clafoutis will deflate when cooling.
