This easy to prepare French baked dessert is custardy in the middle and cake-like around the edges. Clafoutis is best made with tart fruits for a contrast in flavour.
Ingredients
- 3 eggs
- 1 cup full cream milk
- 1/2 cup caster sugar
- 1 Tbsp unsalted butter
- 1 tsp vanilla extract
- 1/2 cup plain flour (all purpose)
- 1 tsp salt
- fruit (apple, cherry, peach, blueberry, apricot, raspberry)
Directions
- Preheat the oven to 180 deg C.
- Grease a baking dish or cast-iron skillet with the butter.
- Beat the eggs, milk, sugar and vanilla.
- Add the flour and salt and mix until combined.
- Arrange the fruit in the baking dish/skillet and pour in the batter.
- Bake for 50 minutes or until golden brown and comes away slightly from the sides of the dish.
- Cool for 10 minutes before serving.
Serve warm with whipped cream and dusted with icing sugar.
Apple and cinnamon is a nice combination.
The clafoutis will deflate when cooling.
