For pasta, soups, stews, pizza or anywhere you need a flavoursome tomato sauce.
Ingredients
- olive oil
- butter (optional)
- garlic
- tinned tomatoes (good quality), chopped
- pinch of salt
Directions
- In a saucepan, sauté the garlic and salt in the olive oil and butter until fragrant.
- Add the tin of chopped tomatoes. Use a potato masher to squash any lumps.
- Simmer with the lid on for 10 minutes.
Serve with pasta as it is or add kalamata olives, capers, chilli, basil leaves or anchovies as desired.
Quantities have been omitted so you can experiment with flavours.
I sometimes add a small amount of vegetable stock for extra flavour.
