This easy Bread and Butter Pudding has always been a family favourite. Great comfort food on a cold winter night.
Ingredients
- 8 slices day old white bread, crusts removed
- butter
- 1/2 cup sultanas
- 4 eggs
- 1/4 cup caster sugar
- 1/2 tsp vanilla essence
- 300ml milk
- 300ml pouring cream
- apricot jam
Directions
- Soak the sultanas in hot water, or alcohol of your choice. Cool.
- Butter the bread slices and arrange in a baking dish.
- Sprinkle on the sultanas.
- Whisk the eggs then combine with the cream, milk, caster sugar and vanilla to make a custard.
- Pour the custard over the bread and let it sit in the fridge for 1 hour.
- Preheat oven to 350 deg F (175 deg C) and bake until golden on top and the custard is firm, about 40 minutes.
- Heat a few tablespoons of apricot jam and spoon over the top and bake for another 5 minutes.
Try using Panettone instead of white bread, omitting the sultanas.
The custard can be flavoured with cinnamon, finely grated orange peel or vanilla bean seeds.
