Bread and Butter Pudding

This easy Bread and Butter Pudding has always been a family favourite. Great comfort food on a cold winter night.

Ingredients

  • 8 slices day old white bread, crusts removed
  • butter
  • 1/2 cup sultanas
  • 4 eggs
  • 1/4 cup caster sugar
  • 1/2 tsp vanilla essence
  • 300ml milk
  • 300ml pouring cream
  • apricot jam

Directions

  • Soak the sultanas in hot water, or alcohol of your choice. Cool.
  • Butter the bread slices and arrange in a baking dish.
  • Sprinkle on the sultanas.
  • Whisk the eggs then combine with the cream, milk, caster sugar and vanilla to make a custard.
  • Pour the custard over the bread and let it sit in the fridge for 1 hour.
  • Preheat oven to 350 deg F (175 deg C) and bake until golden on top and the custard is firm, about 40 minutes.
  • Heat a few tablespoons of apricot jam and spoon over the top and bake for another 5 minutes.

Try using Panettone instead of white bread, omitting the sultanas.
The custard can be flavoured with cinnamon, finely grated orange peel or vanilla bean seeds.
