When I lived in Saudi Arabia, every restaurant served this refreshing, cooling drink. Alcohol is banned in Saudi so the Saudi Cocktail aka Saudi Champagne was a nice alternative.

Ingredients

  • apple juice, chilled
  • sparkling water, chilled
  • 1 red apple
  • 1 orange
  • 1 lemon
  • mint sprigs
  • ice

Directions

  • core and slice the apple into discs, keeping the skin on
  • slice the orange and lemon, medium thickness
  • layer the fruit in a large glass pitcher and top with mint sprigs and a few loose mint leaves
  • add the apple juice and leave in the fridge for 30 minutes to infuse the flavours
  • just before serving, add the sparkling water and ice
  • ** 2 parts juice to 1 part sparkling water **

You can use soda instead of sparkling water or lemonade if you have a sweet tooth.
