Naked Pigs in Blankets

This twist to Pigs In Blankets has become our family favourite at Christmas. This recipe can be made totally gluten free, just make sure the sausages and bread do not contain gluten.

Ingredients

  • 1 packet gluten free pork sausages flavoured with caramelised onion
  • 80g dried cranberries or chopped apricots
  • 80g walnuts or cooked chestnuts, chopped
  • 1 Tbsp fresh thyme or sage leaves
  • 4 slices gluten free bread, crusts removed
  • 12 rashes smoked streaky bacon
  • salt and pepper to taste

Directions

  • break the sliced bread into smaller pieces and blitz in a blender until crumbly
  • remove the sausage meat from their casings and place in a mixing bowl with all the other ingredients, except the bacon
  • mix with your hands until well combined
  • form the mixture into 12 balls and wrap each one in a slice of bacon
  • place on a baking tray and bake at 200 degC for 45 minutes or until slightly crunchy on the outside

Serve as an accompaniment to roast chicken or turkey.
If pork sausage with caramelised onion is unavailable just cook some finely diced onion in olive oil and add to the mixture.

These can be frozen when raw. Just freeze on a tray so they don’t stick together then combine into a zip lock bag once fully frozen. Thaw and use when needed.
